Whoopie Pies are now available from the sweet kitchen! They are one of the latest crazes sweeping American bakeries and are flying off the shelves. It’s easy to see why too. They consist of two cake like cookies sandwiched together with frosting, marshmallow fillings or cream cheese frosting. Traditionally they were always chocolate with Marshmallow Fluff in the centre, but these days all sorts of flavours are on the market. To Americans they offer a taste of nostalgia, to us they are simply delicious and we wonder why we haven’t come across them sooner!
Some say they are the next big thing after cupcakes – I’m not so sure about that, but there’s always room in my kitchen for something new and delicious! Today I have trialled some Chocolate Whoopie Pies with a Peanut Butter Frosting in the middle. Hopefully you can see from the photos how light the sponge cookies are (not dense or chewy like a regular cookie) and I have to say they are absolutely delicious! I was only going to eat half a one in the interests of product development, you understand, but I’m afraid I wolfed down the whole thing! Really scrummy. They offer a better sponge to frosting ratio too, if you are the sort of person who doesn’t like too much frosting.

Chocolate Whoopie Pies with Peanut Butter Frosting
Red Velvet Whoopie Pies with Vanilla Frosting or Cream Cheese Frosting
Pumpkin Whoopie Pies with Cinnamon Frosting
Lemon Whoopie Pies with Lemon Frosting
A fruity one – probably raspberry with a raspberry frosting.
Traditionally these Whoopie Pies are pretty big (up to the size of a hamburger!), but I will make mine a bit smaller than that and they will come in a batch of 12. You can choose any cookie and frosting you combo you like, by the way.
