Oatmeal and Raspberry Muffins for breakfast

It has to be said that it’s not often I get up and bake something special for breakfast, but last night I had my nose buried in a pile of cookery books and I was inspired to try something different this morning. I have the Magnolia Bakery book and liked the sound of their oatmeal muffins (almost good for you with oatmeal, eggs, not too much sugar…). However I thought I’d liven them up by adding a teaspoon of raspberry preserves in the middle.

The jammy bit in the middle was a definite plus, in fact they would have been a bit boring without it!

I’m still experimenting with muffin recipes. This one, although perfectly good, was still not quite what I was expecting, so the quest for the perfect muffin recipe continues!
