Banana Pecan Cupcakes with Caramel Frosting

Here is a sneak peek at May’s special cupcake flavour. It’s a banana and pecan cupcake with buttermilk and cinnamon, a bit more muffin-like in texture than a regular cupcake. I was playing around with frostings today and added a homemade caramel to my normal frosting. It’s a happy accident that it leaves tiny chewy bits of toffee-like caramel throughout the frosting!

I rather like the chewy toffee bits!  The whole lot is topped with chunks of pecans, although you could have flowers on top for a more decorative effect. Available to order from 1st-31st May 2010.
