I made these for us at home, hence the slightly more ‘home-made’ and thrown together look! I am trying out different topping ideas whenever I can and I have fond memories of so-called ‘coffee cakes’ in the US, which are not coffee-flavoured, but are yeast-based cakes with a streusel topping, made to be drunk with coffee.
These particular cupcakes are a vanilla and soured cream sponge topped with a cinnamon streusel topping which cooks like a crumble on top of the cake. They are then drizzled in a plain icing (somewhat messily, I’ll grant you!). I don’t know why, but they took much longer to cook than the recipe said, but tasted very nice, once finally done!
