Chocolate Bark with cranberries, almonds and fudge

These are going to be gifts for our teachers this year.

 

Recipe:

300g dark chocolate

100g white chocolate

Approx. 50g each of three different toppings – I used dried cranberries, chunks of fudge and chopped blanched almonds.

Melt both chocolates in separate bowls. Line a 13 x 9″ tin (or any similar size you have) with baking parchment and pour in the dark chocolate. Smooth it flat with a spatula. Drizzle over the white chocolate and then drag a fork or knife through it to marble the two chocolates. Don’t over-mix, just enough to create a pretty pattern. Sprinkle over your toppings and allow to set in the fridge or a cold place.

When it has set hard, break by hand into shards or chunks and pack into cellophane bags. Finish with a ribbon and gift tag and I think anyone will be pleased with the result!

The idea is certainly not new, but I’m sure you could come up some great new ideas for toppings. Anything from a Rocky Road type bar with biscuits and mini marshmallows to something more adventurous like a chocolate flavoured with chilli and sprinkled with chilli flavoured nuts? With all the wonderful dried fruits, flavoured nuts and flavoured chocolates out there, you could go wild! What would your favourite be?
