I made these beach-themed cupcakes for my niece’s wedding back in March. They wanted seashells and a teal colour as a theme, as the venue was being decorated with shells and driftwood.
There was a mixture of regular and mini sized cupcakes. The vanilla ones were filled with strawberry conserve and sprinkled with a baked crumble and the lemon ones were filled with lemon curd and topped with a lemon frosting.
I made hundreds of these pretty shells using a silicon mould. I make the sugarpaste fairly marbled, so you get streaks of colour in the shell and even included some teal blue in the shells to pick up the colour of the frosting and ribbon on the top cake. The shells were brushed with a lustre for that all-important added sparkle!
My brother, the bride’s father, is a very clever woodland artist and he made a simple driftwood cake topper and the stunning lanterns for each table. The bride and groom wanted to keep things casual and beach inspired and this fitted perfectly.
I am still coveting one of these lanterns. The table decorations were inspired, I must say. Shells, driftwood, wooden lanterns, rocks with the guests name on them and even tiny bottles for you to write send the bride and groom ‘a message in a bottle’! It all looked absolutely stunning and what’s more a real one-off – totally original and personal.
